BBQ Pulled Pork Sandwich

Buchty (pronounced “boo-ktea”) is a Slovak dish that my fiancé constantly raves about, so I thought I would give it a go. I didn’t have plum jam on-hand, so I used a strawberry jam filling. It was super delicious (considering it was day old leavened dough that I had stored in the fridge - I had made steamed dumplings (or “knedla”) the day before for stew). I am super excited that it was super easy to make, and really sweet - and fiancé tells me that they eat these babies as an entree. YES! Dessert for dinner :)
Pistachio macarons with a chocolate ganache filling. My second try at these tiny treasures - they taste amazing! Once I master the craziness that is the piping bag, I’m sure they’ll come out looking a lot cuter, too.
I’m off for a few weeks… and this is the only living thing/person/animal that is with me almost 90% of the day. He’s already sick of me. Evidence? Exhibit A.
“What are you doing? Oh… that thing again.”
“This is so not amusing.”
“Just don’t look at her… maybe she’ll leave me alone.”
“Oh my gooooshhhh… srsly.”
“So. Done.”
Poor guy… but not poor guy! I have been baking delicious dog snacks for him as well! But in terms of delicious human foods, I have actually successfully created a half decent looking batch of pistachio macarons. Apparently, however, my food photography needs work.
And yes. I did, eventually, let him sleep.
Whoa, been a while. It’s been busy. Really busy.
I’ve been cooking and baking more often - who knew I would love it so much! After so many years of resisting, I have finally given in!
Also, I’m obsessed with the Food Network.
Today, to celebrate a really lazy Sunday, I made lemon poppyseed pancakes that the fiancé has claimed to be his favourite pancakes of all time - yes!!!
My favourite part when creating it was actually zesting the lemon - it was my first time zesting anything, but the sweet citrusy smell of the lemon was so worth it!

It’s a Sam Cooke kind of day.
And a pointy-toed shoe kind of day (which is really rare for me - I don’t usually think I can pull them off, but these Tahari’s are an exception to the rule).

The days are getting shorter… time to stock up on vitamin D and light therapy lamps.

Now a whopping 9 months old. See him here @ 9 weeks old. Oh how he’s grown… but still cute as a button!
